Oak Knoll fruit defines the style
The Sauvignon Blanc came from the Oak Knoll District and developed the fruit-forward flavor, color, and aroma that became the cellar’s preferred white-wine direction.

The refrigerator becomes the stabilization tank
When bottles were held below 40°F, potassium bitartrate deposits became visible and the wine looked less brilliant than a commercial white.

The honest lesson
Cold stabilization and clarity are related, but they are not the same job. Chilling can drop tartrate crystals; it does not automatically remove protein haze, colloids, fine lees, or retained CO₂.
The method that came from it
- Bench trial bentonite and use the lowest effective rate.
- Allow every treatment enough time to settle.
- Rack cleanly before final filtration.
- Use tartrate control when the cellar cannot reach true cold-stabilization temperatures.
- Polish at approximately 0.65 micron—or 0.45 micron when the wine and equipment allow.
- Hand-select and test representative competition bottles.
